Ingredients:
4 boneless, skinless chicken breasts
1/4 cup honey
1/4 cup Dijon mustard
2 tablespoons Creole mustard
1 tablespoon Cajun seasoning
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon apple cider vinegar
1/2 teaspoon smoked paprika
Salt and pepper to taste
Fresh parsley, chopped (for garnish)
Directions:
Prepare the Marinade:
In a medium bowl, whisk together honey, Dijon mustard, Creole mustard, Cajun seasoning, olive oil, minced garlic, apple cider vinegar, smoked paprika, salt, and pepper. Mix until well combined.
Marinate the Chicken:
Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure all pieces are well coated. Seal the bag or cover the dish, then refrigerate for at least 1 hour, preferably overnight, to allow the flavors to meld.
Grill the Chicken:
Preheat your grill to medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Grill the chicken for 6-7 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is cooked through.
Serve:
Transfer the grilled chicken to a serving platter and garnish with chopped fresh parsley. Serve hot, and enjoy with your favorite sides.
