Sweet Potato Maple Brown Butter Gnocchi

Ingredients:

2 medium sweet potatoes, peeled and cubed
1 1/2 cups all-purpose flour, plus more for dusting
1/2 cup ricotta cheese
1/4 cup grated Parmesan cheese
1 egg, lightly beaten
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup unsalted butter
2 tablespoons pure maple syrup
1/4 teaspoon ground cinnamon
Fresh sage leaves (optional)
Salt and pepper to taste

Directions:

Preheat your oven to 400°F (200°C). Place the sweet potato cubes on a baking sheet lined with parchment paper. Roast for 25-30 minutes, or until tender. Let cool slightly.
Transfer the roasted sweet potatoes to a food processor and blend until smooth. Measure out 1 cup of sweet potato puree and transfer it to a large mixing bowl.
Add the ricotta cheese, grated Parmesan, egg, salt, and nutmeg to the sweet potato puree. Mix until well combined. Gradually add the flour, mixing until a soft dough forms. The dough should be slightly sticky but manageable. Add more flour if necessary.
Turn the dough onto a floured surface and divide it into four portions. Roll each portion into a long rope about 1/2 inch thick. Cut each rope into 1-inch pieces to form the gnocchi. Lightly press each piece with a fork to create ridges.
Bring a large pot of salted water to a boil. Add the gnocchi in batches and cook for 2-3 minutes or until they float to the surface. Use a slotted spoon to transfer the cooked gnocchi to a plate.
In a large skillet, melt the butter over medium heat. Allow it to cook for 3-4 minutes, swirling occasionally, until it turns golden brown and develops a nutty aroma. Be careful not to burn the butter.
Add the maple syrup and ground cinnamon to the brown butter, stirring to combine. If using sage, add a few fresh sage leaves and cook until crispy.
Add the cooked gnocchi to the skillet and toss to coat them evenly in the maple brown butter sauce. Season with salt and pepper to taste.
Serve the gnocchi warm, garnished with additional grated Parmesan cheese and crispy sage leaves if desired.
