Delicious savory muffins packed with pizza flavors!
Ingredients:
– 2 cups all-purpose flour
– 1 tablespoon baking powder
– 1/2 teaspoon salt
– 1/2 teaspoon garlic powder
– 1 teaspoon dried oregano
– 1/2 cup grated mozzarella cheese
– 1/2 cup pepperoni slices, chopped into small pieces
– 1/4 cup red bell pepper, finely chopped
– 1/4 cup black olives, sliced
– 1/4 cup tomato sauce (for topping)
– 1/4 cup Parmesan cheese, grated
– 1 egg
– 1 cup milk
– 1/4 cup olive oil
Directions:
1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
2. In a large bowl, whisk together the flour, baking powder, salt, garlic powder, and oregano.
3. Add the mozzarella cheese, chopped pepperoni, red bell pepper, and olives to the dry ingredients. Stir to combine evenly.
4. In a separate bowl, beat the egg and then whisk in the milk and olive oil.
5. Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix.
6. Spoon the batter into the muffin tin, filling each cup about two-thirds full.
7. Top each muffin with a small spoonful of tomato sauce, then sprinkle with Parmesan cheese.
8. Bake for 18-20 minutes, or until a toothpick inserted into the center of the muffins comes out clean.
9. Allow the muffins to cool for a few minutes before removing them from the tin.
