Cheesy Taco Pasta

Ingredients:

1 lb ground beef
1 packet taco seasoning
8 oz pasta (penne or elbow)
1 cup salsa
1 cup corn kernels
1 cup black beans, rinsed and drained
2 cups shredded cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup sour cream
1/4 cup chopped green onions
Salt and pepper to taste

Instructions:

Cook pasta according to package directions.
In a skillet, cook ground beef until browned. Drain excess fat.
Add taco seasoning and salsa to the beef, simmer for 5 minutes.
Stir in corn and black beans.
Mix cooked pasta with the beef mixture, half of the cheddar cheese, and sour cream.
Transfer to a greased baking dish, top with remaining cheddar and mozzarella cheese.
Bake at 375°F (190°C) for 20-25 minutes until cheese is melted and bubbly.
Garnish with green onions before serving.
