Smothered Pork Chops with Mushrooms and Herb Potatoes
Ingredients:
For the Pork Chops:
4 bone-in pork chops
2 tbsp olive oil
1 tsp garlic powder
1 tsp paprika
Salt and black pepper to taste
For the Mushroom and Onion Topping:
1 cup sliced mushrooms
1 large onion, thinly sliced
1 tbsp butter
1/2 cup beef or chicken broth
1 tsp Worcestershire sauce
For the Herb Potatoes:
4 medium potatoes, diced
1 tbsp olive oil
1 tsp dried parsley
1/2 tsp garlic powder
Salt and pepper to taste
For the Green Beans:
2 cups green beans, trimmed
1 tbsp butter
Salt and pepper to taste
Instructions:
Prepare the Pork Chops:
Season the pork chops with garlic powder, paprika, salt, and pepper.
Heat olive oil in a skillet over medium-high heat and sear the pork chops for 4-5 minutes on each side until golden brown. Remove and set aside.
Make the Mushroom and Onion Topping:
In the same skillet, melt butter and sauté mushrooms and onions until tender, about 5-7 minutes.
Add broth and Worcestershire sauce, simmering for 2-3 minutes to create a savory sauce. Return the pork chops to the skillet and simmer for another 5 minutes.
Cook the Potatoes:
Preheat the oven to 400°F (200°C). Toss the diced potatoes with olive oil, parsley, garlic powder, salt, and pepper.
Spread on a baking sheet and roast for 25-30 minutes until golden and crispy.
Prepare the Green Beans:
Steam or boil green beans until tender. Toss with butter, salt, and pepper before serving.
Assemble the Plate:
Place the smothered pork chops on the plate, topped with the mushroom and onion sauce. Add a side of herb potatoes and green beans for a complete and hearty meal.
