Homemade Saltwater Taffy Rolls

Ingredients:

  • 2 ½ cups granulated sugar
  • 1 ½ cups light corn syrup
  • 1 cup water
  • 2 tablespoons unsalted butter
  • 2 teaspoons sea salt
  • 1 teaspoon vanilla extract (or other flavoring of your choice)
  • Food coloring (gel works best)

Instructions:

  1. In a heavy saucepan, combine sugar, corn syrup, water, butter, and salt.
  2. Place over medium heat and stir until sugar dissolves completely.
  3. Continue cooking without stirring until the mixture reaches 250°F (hard-ball stage) on a candy thermometer.
  4. Remove from heat and stir in vanilla extract (and flavoring if desired).
  5. Divide the mixture into separate heatproof bowls if you want multiple colors. Add a small amount of food coloring to each bowl and gently stir.
  6. Pour each colored mixture onto a greased marble slab or silicone baking mat. Let it cool until it can be handled but is still warm.
  7. Grease your hands lightly with butter and pull the taffy by stretching it out and folding it back over itself repeatedly until it becomes light in color and firm in texture.
  8. Shape the taffy into long ropes, twist or roll them to create a swirl pattern, then cut into rolls or pieces.
  9. Wrap each piece in wax paper to prevent sticking.

Tip: Work quickly when pulling the taffy so it doesn’t harden before shaping.
