Pecan Pie Cookie
Ingredients:
For the Cookie Dough:
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1/4 teaspoon salt
For the Pecan Pie Filling:
1/2 cup brown sugar
1/4 cup corn syrup (or honey as a substitute)
1 egg
1/2 teaspoon vanilla extract
1 cup chopped pecans
Whole pecan halves for topping (optional)
Instructions:
1. Prepare the Cookie Dough:
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the egg and vanilla extract, and mix well.
Stir in the flour and salt until a soft dough forms.
Wrap the dough in plastic wrap and chill for 30 minutes.
2. Make the Pecan Pie Filling:
In another bowl, whisk together the brown sugar, corn syrup, egg, and vanilla.
Stir in the chopped pecans until well combined.
3. Assemble the Cookies:
Preheat your oven to 350°F (175°C).
Roll out the chilled dough on a floured surface and cut into round shapes.
Place the circles on a baking sheet lined with parchment paper.
Use your finger or the back of a spoon to create a small well in the center of each cookie.
Spoon a small amount of the pecan filling into each well and top with a pecan half if desired.
4. Bake:
Bake the cookies for 12–15 minutes, or until the edges are golden brown.
Let the cookies cool completely before serving.
