Cottage Cheese-Stuffed Pancakes with Sour Cream Glaze

Ingredients:

For Pancakes:

1 cup all-purpose flour

1 tbsp sugar

1 tsp baking powder

1/4 tsp salt

1 cup milk

1 egg

2 tbsp melted butter or oil

Filling:

1 cup cottage cheese

1 tbsp honey or sugar (optional)

1/2 tsp vanilla extract

Sour Cream Glaze:

1/2 cup sour cream

2 tbsp powdered sugar

1 tsp vanilla extract

Preparation:

Make pancakes: Mix dry ingredients. In another bowl, whisk milk, egg, and butter. Combine and cook pancakes on a greased skillet until golden on both sides.

Make filling: Stir together cottage cheese, sweetener (if using), and vanilla.

Stuff pancakes: Spread filling on each pancake and fold or roll.

Make glaze: Mix sour cream, powdered sugar, and vanilla until smooth.

Drizzle glaze over warm stuffed pancakes. Serve immediately.
