Ingredients:
1 pound boneless, skinless chicken breasts, thinly sliced
2 tablespoons vegetable oil
2 cups chow mein noodles, cooked according to package instructions
1 bell pepper, julienned
1 medium carrot, julienned
1/2 cup cabbage, shredded
1 onion, sliced
2 cloves garlic, minced
1/4 cup soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
1/2 cup chicken broth
Fresh green onions and sesame seeds for garnish
Directions:
Heat the vegetable oil in a large skillet or wok over high heat.
Add the chicken slices and stir-fry until browned and cooked through, about 5-6 minutes. Remove chicken from the pan and set aside.
In the same pan, add a bit more oil if necessary, and sauté the garlic and onions until translucent.
Add the bell pepper, carrot, and cabbage to the pan. Stir-fry for about 2-3 minutes until just tender but still crisp.
Return the chicken to the pan. Add the cooked chow mein noodles.
In a small bowl, whisk together soy sauce, sesame oil, sugar, and chicken broth. Pour this mixture over the noodles and vegetables in the pan.
Toss everything together and stir-fry for an additional 2-3 minutes, making sure the sauce evenly coats all the ingredients.
Serve the chow mein garnished with chopped green onions and a sprinkle of sesame seeds.
