Ingredients:
3 eggs
150g sugar (3/4 cup)
100 ml vegetable oil (1/3 cup and 1 tablespoon)
150g natural yogurt (2/3 cup)
Pinch of salt
1 teaspoon vanilla extract
200g plain flour (1 1/4 cups)
1 1/2 teaspoons baking powder (6 g)
1 tablespoon cocoa powder (10 g)
1 teaspoon instant coffee
Warm water, about 2 tablespoons
Some chocolate sprinkles (optional)
Instructions:
Preheat the oven to 170°C (338°F). Grease and flour a baking pan sized 21x11x6 cm.
In a mixing bowl, beat the eggs and sugar until light and fluffy.
Add the vegetable oil, natural yogurt, salt, and vanilla extract to the egg mixture. Mix well.
Sift in the plain flour and baking powder. Fold gently until just combined.
In a small bowl, dissolve the cocoa powder and instant coffee in warm water. Add this mixture to the batter and fold until fully incorporated.
Pour the batter into the prepared baking pan. If desired, sprinkle chocolate sprinkles on top.
Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for a few minutes before transferring it to a wire rack to cool completely.
