Fried Potatoes and Onions – the ultimate comfort food! I made a big batch, and it vanished within minutes. The perfect side dish that satisfies every time.

Ingredients:

 

4 medium-sized russet or Yukon Go ld potatoes
1 large onion
2-3 tablespoons vegetable oil or bacon grease
Salt and pepper to taste
Optional seasonings (such as paprika, garlic powder, or herbs)

Instructions:

Wash and peel the potatoes (optional) and then cut them into small, uniform cubes or slices. This ensures even cooking.

Peel the onion and slice it thinly. You can cut it into rings or chop it, depending on your preference.
Heat a large skillet or frying pan over medium-high heat. Add the vegetable oil or bacon grease and let it heat up.

Add the sliced onions to the hot skillet and sauté them for a few minutes until they become soft and start to turn translucent. Stir occasionally to prevent burning.

Once the onions are ready, add the potato cubes or slices to the skillet. Spread them out evenly in a single layer.

Season the potatoes and onions with salt, pepper, and any optional seasonings you like. Common choices include paprika, garlic powder, or dried herbs like thyme or rosemary.

Allow the potatoes and onions to cook without stirring for a few minutes. This will help them develop a crispy golden crust.

After a few minutes, give the mixture a gentle stir, trying to flip the potatoes over to ensure even browning. Repeat this process every few minutes.

Continue to cook the potatoes and onions for about 15-20 minutes or until they are tender on the inside and crispy and golden brown on the outside. Cooking time may vary depending on the size of your potato pieces and the heat of your stove.

Taste and adjust the seasoning if needed. You can also add more oil or butter if the mixture is getting too dry.

Once the fried potatoes and onions are cooked to your liking, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil.

Serve hot as a side dish alongside your favorite main course. They go well with breakfast, lunch, or dinner.
