CREAMY ROTEL CHICKEN SPAGHETTI CASSEROLE

This classic Southern-style casserole combines tender shredded chicken, creamy sauce, spicy Rotel tomatoes, and melty cheddar tossed with spaghetti and baked until bubbly.

Ingredients
For the Base
- 8 oz spaghetti, cooked and drained
- 2 cups cooked shredded chicken
(rotisserie chicken works perfectly)
For the Flavor
- 1 can (10 oz) Rotel, drained
- 1 can (10.5 oz) cream of chicken soup
- ½ cup sour cream
- 1½ cups shredded cheddar cheese
For Seasoning
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- Salt & black pepper to taste
- Chopped parsley (optional, for garnish)

1 Prepare the Base
- Preheat oven to 350°F (175°C).
- Lightly grease a 9×13-inch baking dish.
- Cook spaghetti until al dente, then drain well.
- Set aside while you prepare the sauce.
2 Make the Sauce
In a large mixing bowl, combine:
- Cream of chicken soup
- Sour cream
- Drained Rotel tomatoes
- Garlic powder
- Onion powder
- Salt & pepper
Whisk until smooth, creamy, and fully blended.
Stir in 1 cup of the shredded cheddar (save the rest for topping).
3 Combine Everything
- Add the shredded chicken to the bowl.
- Add the cooked spaghetti.
- Toss everything together until the pasta is well-coated with the creamy Rotel mixture.
The mixture should be thick, cheesy, and full of flavor.
4 Bake the Casserole
- Spread the mixture evenly into the prepared baking dish.
- Top with the remaining ½ cup cheddar cheese.
- Bake uncovered for 25–30 minutes or until:

5 Serve
Remove from the oven and let it rest for 5 minutes to set.
