Hearty Crescent Roll-Ups with Sausage, Egg & Cheese

Ingredients
For the Filling
- 5 large eggs
- Salt & pepper, to taste
- 1 tablespoon butter (for scrambling the eggs)
- 6–8 fully cooked breakfast sausages (pork, turkey, or chicken)
For the Roll-Ups
- 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
- 1 cup shredded cheese
- (cheddar, Colby Jack, Monterey Jack, or a blend)
Optional Ingredients
- 1 tablespoon milk (for fluffier eggs)
- Everything bagel seasoning (for topping)
- Chopped chives or parsley (for garnish)
Instructions — Step by Step
1 Prepare the Eggs
- Crack the 5 eggs into a bowl.
- Add a pinch of salt, pepper, and 1 tablespoon of milk (optional).
- Beat well until fully combined.
- Melt 1 tablespoon butter in a frying pan on medium heat.
- Pour in the eggs and scramble gently until just set and still soft — don’t overcook.
- Remove from heat and set aside.
2 Prepare the Sausage
- If using pre-cooked breakfast sausage links, heat them in a skillet for a few minutes to brown lightly.
- If using raw sausage, cook until fully cooked through.
- Set aside.
3 Assemble the Crescent Roll-Ups
- Preheat your oven to 375°F (190°C).
- Open the crescent roll dough and separate it into 8 triangles.
- On each triangle:
- Add a small spoonful of scrambled eggs at the wide end.
- Add one sausage link on top of the eggs.
- Sprinkle a generous pinch of shredded cheese over the sausage.
- Starting at the wide end, roll each crescent tightly toward the point.
- Place on a baking sheet lined with parchment paper.
- Optional: brush lightly with melted butter and sprinkle with everything bagel seasoning.
4 Bake
- Bake for 12–15 minutes, or until golden, puffy, and the cheese is melted and bubbling.
5 Serve
Serve warm with:
