 Sausage, Egg & Cheese Breakfast Roll-Ups

 

Hearty Crescent Roll-Ups with Sausage, Egg & Cheese
A warm, comforting, grab-and-go breakfast that combines fluffy eggs, savory sausage, and melted cheese all wrapped in buttery crescent dough. Perfect for busy mornings, weekend brunch, or meal prep!

Ingredients

For the Filling

  • 5 large eggs
  • Salt & pepper, to taste
  • 1 tablespoon butter (for scrambling the eggs)
  • 6–8 fully cooked breakfast sausages (pork, turkey, or chicken)

For the Roll-Ups

  • 1 can (8 oz) Pillsbury™ refrigerated crescent dinner rolls
  • 1 cup shredded cheese
    • (cheddar, Colby Jack, Monterey Jack, or a blend)

Optional Ingredients

  • 1 tablespoon milk (for fluffier eggs)
  • Everything bagel seasoning (for topping)
  • Chopped chives or parsley (for garnish)

Instructions — Step by Step

1 Prepare the Eggs

  1. Crack the 5 eggs into a bowl.
  2. Add a pinch of salt, pepper, and 1 tablespoon of milk (optional).
  3. Beat well until fully combined.
  4. Melt 1 tablespoon butter in a frying pan on medium heat.
  5. Pour in the eggs and scramble gently until just set and still soft — don’t overcook.
  6. Remove from heat and set aside.

2 Prepare the Sausage

  • If using pre-cooked breakfast sausage links, heat them in a skillet for a few minutes to brown lightly.
  • If using raw sausage, cook until fully cooked through.
  • Set aside.

3 Assemble the Crescent Roll-Ups

  1. Preheat your oven to 375°F (190°C).
  2. Open the crescent roll dough and separate it into 8 triangles.
  3. On each triangle:
    • Add a small spoonful of scrambled eggs at the wide end.
    • Add one sausage link on top of the eggs.
    • Sprinkle a generous pinch of shredded cheese over the sausage.
  4. Starting at the wide end, roll each crescent tightly toward the point.
  5. Place on a baking sheet lined with parchment paper.
  6. Optional: brush lightly with melted butter and sprinkle with everything bagel seasoning.

4 Bake

  • Bake for 12–15 minutes, or until golden, puffy, and the cheese is melted and bubbling.

5 Serve

Serve warm with:
✔ Salsa
✔ Ketchup
✔ Hot sauce
✔ Gravy
✔ Maple syrup (yes — sweet + savory is amazing!)

Tips for Perfect Breakfast Roll-Ups

  • Don’t overfill. A little filling goes a long way.
  • Add shredded hash browns inside for extra heartiness.
  • Use silicone baking mats to prevent sticking and make cleanup easier.
  • Make ahead: assemble the roll-ups the night before and bake in the morning.
  • Freeze: They freeze great! Reheat in air fryer or oven.

 Variations

1. Bacon, Egg & Cheese

Swap sausage for crispy bacon strips.

2. Ham & Swiss

Add sliced ham + Swiss cheese.

3. Veggie Sunrise

Add sautéed peppers, onions, spinach, or mushrooms.

4. Air Fryer Version

Air fry at 350°F (175°C) for 6–8 minutes.

5. Spicy Tex-Mex

Add jalapeños + pepper Jack cheese + salsa for dipping.
