Ingredients

Dry Ingredients:
2 3/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
Wet Ingredients:
1 cup unsalted butter, softened
1 1/2 cups granulated sugar
1 large egg
1 teaspoon vanilla extract
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
Extra sugar for rolling

Instructions

Preheat Oven: Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt.
Combine Wet Ingredients: In a large bowl, cream together the butter and sugar. Beat in the egg, vanilla extract, lemon juice, and lemon zest until well combined.
Form Dough: Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms.
Shape and Bake: Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar. Place on baking sheets and bake for 9–11 minutes until lightly golden.
Cool and Serve: Allow the cookies to cool on the pan for 5 minutes before transferring to a wire rack to cool completely.
