Savory Candied Yams with Bacon and Pecans
Ingredients:
4 medium sweet potatoes, peeled and diced
4 slices bacon, chopped
1/4 cup unsalted butter
1/4 cup brown sugar
2 tablespoons maple syrup
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup chopped pecans
Salt and pepper, to taste
Instructions:
Cook bacon in a large skillet over medium heat until crispy. Remove and drain on paper towels, reserving about 1 tablespoon bacon grease in skillet.
Add butter to skillet with bacon grease; melt over medium heat. Stir in brown sugar, maple syrup, cinnamon, nutmeg, salt, and pepper. Simmer 1–2 minutes until slightly thickened.
Add diced sweet potatoes; toss to coat in glaze. Cover and cook over medium-low heat for 20–25 minutes, stirring occasionally, until yams are tender and caramelized.
Stir in crispy bacon and pecans; cook 2–3 minutes to warm through.
Transfer to serving dish and serve warm.
