Caramel Cheesecake Cookies

Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese, softened
  • ¼ cup powdered sugar
  • ½ cup caramel sauce (plus extra for drizzling)
  • 1 cup graham cracker crumbs

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare the cheesecake filling: In a bowl, beat the cream cheese and powdered sugar until smooth. Chill in the refrigerator while preparing the cookie dough.
  3. Make the cookie dough: In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  4. In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well.
  5. Gradually add the dry ingredients to the wet mixture and mix until combined.
  6. Shape the cookies: Take a tablespoon of cookie dough, flatten it in your hand, place a small scoop of the cheesecake filling in the center, and fold the dough around it to seal. Roll into a ball.
  7. Roll each ball in graham cracker crumbs and place on the baking sheet. Slightly flatten each ball.
  8. Bake for 10–12 minutes, or until lightly golden.
  9. Allow cookies to cool slightly, then drizzle with caramel sauce before serving.
