Caramel Cheesecake Cookies
Ingredients:
- 1 ½ cups all-purpose flour
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- ½ cup granulated sugar
- ½ cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 8 oz cream cheese, softened
- ¼ cup powdered sugar
- ½ cup caramel sauce (plus extra for drizzling)
- 1 cup graham cracker crumbs
Instructions:
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the cheesecake filling: In a bowl, beat the cream cheese and powdered sugar until smooth. Chill in the refrigerator while preparing the cookie dough.
- Make the cookie dough: In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- In a large mixing bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract and mix well.
- Gradually add the dry ingredients to the wet mixture and mix until combined.
- Shape the cookies: Take a tablespoon of cookie dough, flatten it in your hand, place a small scoop of the cheesecake filling in the center, and fold the dough around it to seal. Roll into a ball.
- Roll each ball in graham cracker crumbs and place on the baking sheet. Slightly flatten each ball.
- Bake for 10–12 minutes, or until lightly golden.
- Allow cookies to cool slightly, then drizzle with caramel sauce before serving.
