Cheesy Cabbage Casserole

Ingredients:

1 medium head green cabbage, chopped (about 6 cups)
1 tbsp olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 tsp salt
½ tsp black pepper
1 tsp dried thyme
1 cup sour cream
1 cup shredded sharp cheddar cheese
½ cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 large eggs, beaten
½ cup breadcrumbs (optional topping)
1 tbsp melted butter (optional, for topping)

Directions:

Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
Heat olive oil in a skillet over medium heat. Sauté onion until translucent, about 5 minutes. Add garlic and cook 1 minute.
Add cabbage and cook until softened, about 8–10 minutes. Season with salt, pepper, and thyme.
In a large bowl, mix sour cream, cheddar, mozzarella, Parmesan, and eggs until combined.
Add cabbage mixture and stir to combine.
Pour into prepared dish and spread evenly.
If using, mix breadcrumbs with melted butter and sprinkle on top.
Bake for 30–35 minutes until bubbly and golden.
Let rest 5–10 minutes before serving.
