Caramel Apple Jam

Ingredients:

– 4 cups chopped apples (about 4-5 apples)
– 2 tablespoons lemon juice
– 1 cup brown sugar, packed
– 1 cup granulated sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
– 1/4 teaspoon ground allspice

Directions:

1. In a large pot, combine the chopped apples and lemon juice. Cook over medium heat, stirring occasionally, until the apples start to soften, about 10 minutes.
2. Add the brown sugar, granulated sugar, ground cinnamon, nutmeg, and allspice to the pot. Stir well to combine.
3. Reduce the heat to low and simmer the mixture, stirring frequently to prevent sticking or burning, until the jam thickens and the apples break down, about 45-60 minutes.
4. To test for doneness, place a small spoonful of jam on a chilled plate. If it wrinkles when pushed with your finger, it is ready.
5. Remove from heat and let cool slightly before transferring to sterilized jars. Store in the refrigerator and use within a few weeks.

Tips:
Use tart apples like Granny Smith for a balanced sweet-tart flavor in your jam.
Stir frequently during simmering to prevent the sugars from caramelizing too much and burning.
