Peanut Butter Butterscotch Bars

Soft, chewy, and packed with rich peanut butter flavor and sweet butterscotch chips — these bars are an irresistible dessert or snack with just the right touch of nostalgia.

Ingredients

1/2 cup unsalted butter, melted
1 cup creamy peanut butter
1 cup brown sugar, packed
1/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
1 cup butterscotch chips
1/2 cup chocolate chips (optional)

Instructions

1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
2. In a large bowl, whisk together melted butter, peanut butter, brown sugar, and granulated sugar until smooth.
3. Beat in the eggs and vanilla until well combined.
4. Add flour, baking powder, and salt, stirring just until the dry ingredients are fully incorporated.
5. Fold in the butterscotch chips and chocolate chips if using.
6. Spread the batter evenly into the prepared pan.
7. Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
8. Cool completely before slicing into bars.
