Shrimp Crab Melts
This gooey, golden melt is your next easy comfort food hit! Perfect for a quick lunch or a comforting dinner, these melts are packed with savory seafood and melty cheese.
Ingredients
1 cup cooked shrimp, peeled & deveined, chopped
1/2 cup lump crab meat (drained well if canned or imitation)
1 cup shredded mozzarella cheese
1/4 cup mayonnaise (or Greek yogurt for a lighter option)
1 tablespoon fresh chives, finely chopped (or 1 teaspoon dried dill)
1/2 teaspoon Old Bay seasoning (optional, but highly recommended for seafood)
Pinch of garlic powder
Salt and black pepper to taste
8 slices of your favorite bread (sourdough, Texas toast, or white bread work great)
2 tablespoons unsalted butter, softened (for spreading on bread)
Instructions
Prepare the Seafood Mixture: In a medium bowl, combine the chopped cooked shrimp, lump crab meat, shredded mozzarella cheese, mayonnaise, fresh chives (or dill), Old Bay seasoning (if using), and garlic powder. Gently mix everything together until just combined. Season with salt and black pepper to taste.
Assemble the Melts: Spread one side of each bread slice generously with softened butter. Flip four of the bread slices over (butter-side down). Evenly divide the shrimp and crab mixture among these four slices, spreading it to the edges. Top with the remaining four bread slices, butter-side up.
Cook the Melts: Heat a large non-stick skillet or griddle over medium heat. Place the melts in the hot skillet, butter-side down. Cook for 3-5 minutes per side, or until the bread is golden brown and toasted, and the cheese is melted and gooey. You might need to cook them in batches, depending on the size of your skillet. Press down gently with a spatula occasionally to ensure even toasting.
Serve Hot: Carefully remove the melts from the skillet. For easier eating, you can cut them in half diagonally. Serve immediately and enjoy your warm, cheesy, seafood comfort food!
