Apple Crisp Cheesecak
Ingredients:
Base:
– 190 grams graham cracker crumbs
– 70 grams unsalted butter, melted
– 50 grams granulated sugar
Apple Filling:
– 3 large apples, peeled, cored, thinly sliced
– 28 grams unsalted butter
– 110 grams brown sugar
– 1 teaspoon ground cinnamon
– 1/4 teaspoon ground nutmeg
Cheesecake Filling:
– 680 grams cream cheese, softened
– 200 grams granulated sugar
– 1 teaspoon vanilla extract
– 3 large eggs
Crumble Topping:
– 95 grams all-purpose flour
– 45 grams old fashioned oats
– 110 grams brown sugar
– 1/2 teaspoon ground cinnamon
– 60 grams unsalted butter, cold and cubed
Directions:
1. Preheat the oven to 325°F (163°C). Grease a 9-inch springform pan.
2. Prepare the base by mixing graham cracker crumbs, melted butter, and granulated sugar in a bowl until combined. Press evenly into the bottom of the pan. Bake for 10 minutes, then set aside.
3. For the apple filling, melt butter in a skillet over medium heat. Add sliced apples, brown sugar, cinnamon, and nutmeg. Cook until apples are tender and caramelized, about 8-10 minutes. Remove from heat and let cool slightly.
4. In a large bowl, beat cream cheese and granulated sugar until smooth. Add vanilla extract and eggs one at a time, beating well after each addition.
5. Spread half of the cheesecake filling over the baked crust. Layer the cooked apple filling evenly over it, then pour the remaining cheesecake filling on top.
6. To make the crumble topping, combine flour, oats, brown sugar, and cinnamon in a bowl. Cut in the cold butter using a pastry cutter or fingers until the mixture resembles coarse crumbs.
7. Sprinkle the crumble topping evenly over the cheesecake layer.
8. Bake for 55-65 minutes, or until the edges are set and the center slightly jiggles. Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour.
9. Remove from oven and chill in the refrigerator for at least 4 hours or overnight before serving.
