Ingredients:
For the Sandwich:
• 4 slices sourdough or rustic bread
• 1 cup fresh spinach (baby spinach preferred)
• 1/2 cup crumbled feta cheese
• 1/2 cup shredded mozzarella or provolone
• 2 tbsp sun-dried tomatoes (chopped)
• 1 tbsp black olives (sliced, optional)
• 2 tbsp olive oil or softened butter
• 1 garlic clove, minced
Optional Add-ons:
• Red pepper flakes
• Fresh basil or oregano
Instructions:
Step 1: Sauté the Spinach
In a skillet over medium heat, add a drizzle of olive oil and the minced garlic. Sauté for 30 seconds, then add spinach and cook until wilted. Set aside.
Step 2: Assemble the Layers
On one slice of bread, layer feta, sautéed spinach, sun-dried tomatoes, olives (if using), and mozzarella. Top with another slice of bread. Repeat for the second sandwich.
Step 3: Grill to Perfection
Heat a skillet or grill pan over medium heat. Spread olive oil or butter on the outsides of each sandwich. Grill for 2–3 minutes per side or until golden brown and cheese is melted.
Step 4: Slice & Serve
Remove from heat, let rest for 1 minute, then slice diagonally. Serve warm with a side salad or tomato soup if desired.
