Savory Beef Meatballs in Mushroom Sauce

Ingredients:

1 lb ground beef
1/3 cup breadcrumbs
1/4 cup finely chopped onion
1 egg
1 clove garlic, minced
1 tsp Worcestershire sauce
Salt and pepper to taste
1 can cream of mushroom soup
1 cup beef broth
1 tbsp tomato paste
1 tsp Dijon mustard
1 tbsp cornstarch
Fresh parsley for garnish

Instructions:

In a mixing bowl, combine the ground beef, breadcrumbs, onion, egg, garlic, Worcestershire sauce, salt, and pepper. Mix well until evenly combined.
Shape the mixture into 1-inch meatballs and set aside.
Heat a large skillet over medium heat and lightly grease it with oil. Add the meatballs and cook until browned on all sides. Remove from the skillet and set aside.
In the same skillet, combine cream of mushroom soup, beef broth, tomato paste, and Dijon mustard. Stir well and bring to a simmer.
Mix the cornstarch with 1 tablespoon of water to create a slurry. Slowly add it to the sauce, stirring continuously to thicken.
Return the meatballs to the skillet, coating them with the sauce. Cover and simmer for 10 minutes, until fully cooked.
Garnish with fresh parsley and serve hot over mashed potatoes, rice, or egg noodles.
