2 tbsp fresh chives, finely chopped (plus more for garnish)

Directions:
Preheat Oven: Preheat your oven to 375°F (190°C). Grease a medium-sized baking dish with butter or non-stick spray.
Mix Ingredients: In a large mixing bowl, whisk the eggs until smooth. Add cottage cheese, shredded cheese, Parmesan, flour (if using), garlic powder, onion powder, salt, and pepper. Stir in the chopped chives.
Pour into Dish: Pour the mixture into the prepared baking dish, spreading it evenly.
Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the center is set. You can check doneness by inserting a toothpick into the center—it should come out clean.
Garnish and Serve: Remove the casserole from the oven and let it cool slightly. Garnish with additional chives. Slice into portions and serve warm.
