Cajun Chicken with Sundried Tomato & Spinach Mac & Cheese

Ingredients

For the Cajun Chicken:

2 large chicken breasts, sliced in half lengthwise
1 tbsp olive oil
1 tbsp Cajun seasoning
Salt and pepper, to taste

For the Mac & Cheese:

2 cups elbow macaroni (or pasta of choice)
2 tbsp butter
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups milk
1 cup heavy cream
1½ cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes, chopped
2 cups fresh spinach, chopped
Salt and pepper, to taste

Directions

Cook the Chicken: Season chicken breasts with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil over medium heat. Sear chicken for 5-6 minutes on each side until golden and cooked through. Remove from skillet and set aside.

Cook the Pasta: Boil pasta according to package instructions until al dente. Drain and set aside.

Make the Sauce:

In the same skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.
Stir in flour and cook for another minute.
Gradually add milk and cream, whisking constantly until smooth and thickened (about 3-5 minutes).
Add Cheese and Flavorings:

Lower the heat and add shredded cheddar and Parmesan, stirring until melted and creamy.
Add sun-dried tomatoes and spinach, cooking until spinach wilts. Season with salt and pepper to taste.
Combine: Add the cooked pasta to the sauce, stirring until well coated.

Serve: Plate the mac and cheese, then top with sliced Cajun chicken. Garnish with chopped parsley if desired.
