Philly Steak Cheese Fries

Ingredients:

For the Fries:

4 large russet potatoes, peeled and cut into fries
2 tablespoons vegetable oil
Salt and pepper, to taste
1/2 teaspoon garlic powder (optional)
For the Philly Steak:

1 lb thinly sliced ribeye steak or flank steak
1 tablespoon vegetable oil
1 small onion, finely chopped
1 bell pepper (red, green, or yellow), sliced
2 cloves garlic, minced
Salt and pepper, to taste
1 tablespoon Worcestershire sauce
For the Cheese Sauce:

2 tablespoons butter
2 tablespoons all-purpose flour
1 cup milk
1 1/2 cups shredded cheddar cheese
1/2 cup shredded provolone cheese
1/2 teaspoon paprika (optional)
1/2 teaspoon Dijon mustard (optional)
For Garnish:

Fresh parsley, chopped
Extra cheese for topping (optional)

Instructions:

Prepare the Fries:

Preheat your oven to 425°F (220°C).
Place the cut potatoes in a large bowl of cold water for at least 30 minutes to remove excess starch. Drain and pat dry with a clean towel.
Toss the dried potato fries with vegetable oil, salt, pepper, and garlic powder (if using).
Spread the fries in a single layer on a baking sheet. Bake for 25-30 minutes, turning halfway through, until golden brown and crispy.
Cook the Philly Steak:

While the fries are baking, heat vegetable oil in a large skillet over medium-high heat.
Add the chopped onions and bell peppers to the skillet and cook until softened, about 5 minutes.
Add the minced garlic and cook for an additional 1 minute.
Add the thinly sliced steak to the skillet, season with salt and pepper, and cook until browned and cooked through, about 3-4 minutes.
Stir in Worcestershire sauce and cook for another minute. Remove from heat and set aside.
Make the Cheese Sauce:

In a medium saucepan, melt butter over medium heat.
Stir in the flour and cook for about 1 minute to create a roux.
Gradually whisk in the milk, cooking and stirring until the mixture thickens, about 3-4 minutes.
Reduce the heat to low and add the shredded cheddar and provolone cheeses. Stir until melted and smooth.
Season with paprika and Dijon mustard if desired. Keep warm over low heat.
Assemble the Dish:

Once the fries are baked, remove them from the oven and place them on a serving platter or individual plates.
Top the fries with the cooked Philly steak mixture.
Drizzle the warm cheese sauce generously over the steak and fries.
Garnish with chopped fresh parsley and extra cheese if desired.
Serve:
